Seed and Carrot Pesto

  • 1/2 cup sunflower seeds
  • 1/2 cup pepitas
  • 1/4 cup sesame seeds
  • 1 cup finely grated carrot
  • 1 cup firmly packed corriander leaves
  • 1 cup firmly packed parsley
  • 1 large lemon, zested and juiced
  • 1 glove garlic, chopped
  • 1 tsp ground cumin
  • 1/4 extra virigin olive oil (more if desired)

process all ingrediants in food processor, except olive oil. once processed add olive oil and 1/3 cup of water and process until smooth.

Nutrition - per tbs - 2g protein, 5g good fat, 1g carb, 1g sugar, 1g dietary fibre, 5mg sodium, 60 cals.
